I came across a recipe for a delicious rustic tomato tart on the New York Times Cooking website and I knew I wanted to try a vegan version of it. The tomatoes right now are so incredibly sweet and the vibrant colors of the heirloom variety are a treat for the eyes!

Panna Cotta recipes have been all over the internet lately, and for good reason! They are simply elegant, impressive and delicious little desserts!
The first time I tested this recipe, I was so excited to share it with my husband (who is my unofficial taste tester). I made it look all fancy and served it on a beautiful ceramic platter and just started at him while he took his first bite – not creepy at all.
I’ve got another watermelon recipe for you. This time in the form of a refreshing drink! This might be one of my favorite summertime treats. I love watermelon juice, I love rose water and I love the flavor of cucumber in pretty much any beverage. Cucumber soda anyone? Just me?
Truth be told, I was never much of a watermelon fan. I found the fruit well… boring. Blasphemy! I know, I know. I guess I just needed some time to come to my senses, because I can’t get enough of the sweet, juicy fruit during the summer months.
