Here is my second mocktail and one that I have been thinking about for years (no seriously – ever since I had my health coaching blog). Why is it that some ideas just come and go and then come back again years later?
Anyways, this is the perfect summer drink! I mean it’s got all the lime and mint flavor of a mojito without the hangover! I used coconut water in place of the rum and I’m finding that it’s been a great substitute for many mocktail recipes!

Ingredients
- 3oz coconut water
- 10 mint leaves
- 1 Tbsp sugar*
- 3 slices lime
- Club soda
Instructions
- Add lime and sugar to a tall glass and muddle it release the lime juice.
- Lightly rub mint leaves in hands, rub around rim of glass and add to glass.
- Middle a little more.
- Fill glass with ice.
- Put in coconut water, top off with club soda and garnish with more mint and limes if desired.
*Can use Monk Fruit sugar which is a delicious zero calorie sweetener or honey simple syrup if not strictly vegan for healthier options than regular white sugar
