Mangos are my absolute favorite fruit. My mom used to buy them by the case during the summer months when they are in season and always leave a large bowl of fresh cut fragrant mangos in the refrigerator.
Mango lassis (pronounced “lussi”, not lassi like the dog) are a popular version of a traditional yogurt drink found throughout India and in many Indian restaurants around the world.
A basic lassi combines yogurt, milk and a variety of spices to create a creamy, frothy treat that is excellent for supporting digestion and often consumed alongside a meal. They can be either salty or sweet and come in a variety of flavors from plain to mango and rose.
Being the mango lover I am, the mango lassis have always been my favorite, but because I can’t have much dairy these days, I usually pass on them.
I finally tried to make a vegan version at home and it came out absolutely delicious! The one thing I would recommend is making sure your mangos are VERY ripe! The sweeter they are, the better your lassi will taste!
1 cup plain unsweetened almond milk yogurt (I used Kite Hill brand) To garnish:Ingredients
1/2 cup plain unsweetened non-dairy milk (almond or coconut)
1.5 cups ripe mangos, peeled and cut into large chunks
2-3 tsp coconut sugar (or honey if not vegan)
1/8-1/4 tsp ground cardamom
Pinch of saffron
Extra saffron
Chopped pistachios
