After making my own vegan white chocolate (traditional white chocolate does have milk in it), I have the utmost respect for chocolatiers. It truly is an art and I am determined to learn more and more about the process of making chocolate.
I grew up loving peanut butter cups. The combination of chocolate and peanut butter will always be one of my favorites, but after visiting the farmers market and having a taste of pistachio butter from one of the vendors, I knew I wanted to try a version with this creamy deliciousness.
Making the white chocolate was an adventure in and of itself and I had to try a few different recipes to get to one I was happy with. I think I will continue to experiment with it, but this one is pretty damn good so I had to share it!
I decided to make the pistachio butter from scratch as well. I have a Vitamix and it’s amazing at making nut butters. I had to stop myself from eating all of it before I used it in the cups because it’s that good!
I really had a lot of fun making these and I’m already concocting other flavor combinations to share with you all!
